We have an office potluck coming up and as one of the members with a difficult diet, I always try and cater to anyone else in the office who has dietary issues with my recipe choice. This is especially important because very few other people bother to, so choices can be truly limited for some.
We have a girl in the office who is Jain, and therefore she cannot have eggs (or meat or root vegetables). This recipe totally fits the bill and even better, I know its going to be delicious. I’m totally stoked.

A half sheet measures 12.5 x 15.5 so it would have been a better choice. As I told you, I have one older-than-the-hills thin, brown cookie sheet that is exactly 10.5 x 15.5 and I keep it around for Dolly’s Crisp Toffee Bars – and for some reason, always use it for nachos.
